One of the special treats of breakfast at Camp of the Woods is granola. About once a week in the evening you may smell a wonderful sweet aroma floating around camp. As the baker that is one of my favorite times. The granola cooks long and slow and the smell fills the room and out the window. You have already seen the step by step of another popular breakfast item, buttermilk syrup! If not, it is here on the blog, look it up!
Here is the step by step of making granola:
The first step is to mix all the dry ingredients together. Melt and stir together butter, honey, brown sugar, and vanilla. Pour over dry ingredients, mixing well.
Next spread on a baking sheet or two and cook at 275 for one hour. Be sure to stir it every 15-20 mins.
Cool and eat! Or store in a container with lid.
We always serve Sola’s granola with yogurt. If you are really ambitious you can add some fruit and make a fruit/yogurt/banana bowl! YUM!
Sola’s Granola
4 c. Old Fashioned Rolled Oats
5 c. Quick Oats
1 c. Coconut
½ c. Whole Wheat Flour
½ c. Wheat Germ/Bran
½ c. Sesame Seeds (optional)
1 c. Sunflower Seeds (optional)
1 c. Almonds or Pecans
1 tsp. Cinnamon
1 ½ c. Butter or Margarine
1 c. Honey
½ c. Brown Sugar
2 tsp. Vanilla or Almond extract
Mix together oats, coconut, flour, wheat germ/bran, sesame seeds, sunflower seeds, almonds/pecans, and cinnamon. Melt and stir together butter, honey, brown sugar, and vanilla. Pour over grain and seed mixture and cook on a cookie sheet at 275 degrees for one hour. Stir every 15-20 minutes.
