A favorite staple at Camp of the Woods is our famous Buttermilk Syrup. Yum! Making buttermilk syrup is an art; an art that we would like to share with you all in order to get more of this goodness out into the world.
First off, you’ll need a large pot, the largest pot you have; ideally a stock pot. This syrup will foam to 5 or 6 times it’s original size, and if it over flows it will be a very sticky mess to clean up. (Trust us.)
Once you have your pot, you’ll also need:
1 ½ cup of sugar
¾ cup of buttermilk
½ cup of butter or margarine
2 tbsp of corn syrup
1 tsp of baking soda
2 tsp of Vanilla
First melt your butter on medium heat.
Next, add your sugar and stir, or whisk, until it dissolves. Add buttermilk and corn syrup.
Once those ingredients are blended nicely, add baking soda. (This is where you’ll start to see foam.) Stir constantly and set a timer for 7 minutes. When your mixture has started to boil, lower the temperature. (If you boil for 7 minutes straight, you’ll end up with caramel!)
After 7 minutes, remove from heat, add vanilla, and whisk together.
Serve warm over pancakes or dessert dishes and enjoy!
